• 1½ cups water, divided use
• 3 Tbsp. raw honey
• ½ cup fresh lemon juice
• Heat ½ cup water and honey in small saucepan over medium-high heat; cook, stirring frequently, for 5 minutes or until well blended. Cool to room temperature.
• Combine honey mixture and lemon juice in a bowl or pitcher. Gradually add remaining water to desired taste.
• Pour evenly into four ice pop molds; freeze for at least four hours, or until set.
TIP: ¼ cup fresh herbs or seasonings (like peeled ginger, basil, rosemary, lavender, or thyme) wrapped tightly in cheesecloth can be added to the water and honey mixture. Boil for 5 minutes. Allow to steep for 1 to 2 hours; strain.
